I don't remember the details but I distinctly remember the sensation of the first time I knowingly tasted cilantro. It was in a salsa. It's an understatement to say that I didn't remember tasting anything so good in my adult life. In fact, my reaction was exactly the opposite of those who hate it most. The feeling they report is not just one of unpleasantness, or even of nauseousness repulsion, but of actual evil. In contrast, the feeling I had was not just of having tasted something extraordinarily pleasant, but one of having been transported to paradise for a short introductory visit. There's something quite unusual about this spice.
