I love Mexican food and have sought out authentic Mexican in all the 5 states and 2 countries I've lived in during my life. It was never in Mexican food until about 15-20 years ago! Grrrr!! Now I can't get Mexican without it unless I cook it myself. I used to blame it in the Guatemalan influence, but now I think the real blame goes to those Two Hot Tamale chefs who started using it in their Southwestern cuisine and on their old TV show!
